How to Cook Beef Tenderloin

Also known as eye fillet, beef tenderloin is a meat cut from the heifer of a cow. This meat cut is very special because it is very tender and easy to cook. Beef Steaks with Blue Cheese

To prepare this dish, you need two beef tenderloin fillets, two ounces of blue cheese, two tablespoons butter, two slices white bread, a tablespoon of olive oil and two tablespoons grated Parmesan cheese. Wash the meats and pat dry. Put the fillets inside the broiler and cook for eight minutes, on each side. You can use the meat thermometer if you want to ensure that the meat is done. If you prefer the meat to be medium rare, you need to set the broiler to 145 degrees Fahrenheit. On the other hand, if you like the meat to be well done, set the broiler to 170 degrees Fahrenheit.

In a large bowl, mix the butter and blue cheese. Heat oil in a pan and sauté bread cubes. Drizzle with Parmesan cheese. Remove the mixture from the pan and pour over the fillets. Broil for another minute and serve immediately.

Beef and Vegetable Ragout

For this special dish, you will use ¾ pound beef tenderloin cut into strips, a tablespoon of olive oil, 1 ½ cups sliced fresh mushrooms, a medium size onion and two garlic cloves. In addition to these ingredients, you need two teaspoons all-purpose flour, ½ teaspoon salt, ¼ teaspoon black pepper, a small can of beef broth, ¼ cup port wine, two cups sugar snap peas and a cup of cherry tomatoes.

Pour olive oil in a pan and heat over medium fire. Brown the beef for three minutes on each side. Drain excess oil from the meat using paper towel. Add the onion, garlic and mushrooms in the pan. Drizzle with flour and stir. Season with pepper as well as salt. Pour the broth and wine in the pan. Stir until the mixture is thick then add the peas. Cook the sauce for three minutes to four minutes. Add the tomatoes and heat. Add the beef in the pan. Heat the dish for two minutes. Serve immediately.
