Beat eggs in a small bowl and add the sugar, pumpkin pie spice and evaporated milk. Mix thoroughly. Put the crust in a baking pan and pour the mixture over the crust. Slice the vegetable into small pieces. Top the pie with the squash. Place the pan in the oven that was preheated to 350 degrees Fahrenheit. Bake for 40 minutes to an hour. This tasty and hearty dish contains three pounds butternut squash, three baking apples, six tablespoons butter, 2/3 cup brown sugar, 1 ½ tablespoon flour and 1 ¼ teaspoon salt. This tasty and satisfying dish contains a medium size butternut squash, ½ cup water, ¼ cup chopped onion, a cup of finely diced apple, two tablespoons butter, a cup of cottage cheese, 1/8 teaspoon ginger, 1/8 teaspoon cinnamon, ¼ teaspoon pepper, ¼ teaspoon salt, a cup of grated Cheddar cheese and ½ cup dried parsley.

Melt butter in a skillet and sauté onion and apple. Add the squash, ginger, cinnamon, pepper and salt. Cook for seven minutes to 10 minutes. Add the grated cheese and cover the skillet. Cook for another three minutes or until the cheese melts. Transfer the dish in a plate and garnish with dried parsley.
