To prepare this pleasant tasting dish, you need four pounds trout, ½ teaspoon salt, ½ teaspoon pepper, a can of diced tomatoes, two tablespoons olive oil, two tablespoons chopped parsley, a clove of garlic, ½ cup white wine, a lemon and four sprigs of parsley. Preheat oven to 205 degrees Celsius or 400 degrees Fahrenheit. Season the fish with pepper and salt. Arrange the fish in a greased baking dish. In a medium bowl, mix olive oil, diced tomatoes, minced garlic and two tablespoons of chopped parsley. Top the fish with the mixture. Baste the dish with wine.
